Mini Bacon Wrapped Meatloaf

This was a big hit at our Superbowl party this year!

  • 1 1/2 pounds ground beef
  •  2 eggs
  •  1 small onion, chopped
  •  1/2 cup barbecue sauce
  •   1 3/4  cups bread crumbs
  •  3/4 teaspoon liquid smoke flavoring
  •  3/4 teaspoon ground black pepper
  •  1 teaspoon salt
  •  1/2 teaspoon garlic powder
  •  18 slices bacon
  •  6 mini loaf pans
  1. Mix ground beef, eggs, onion, barbecue sauce, bread crumbs, liquid smoke, black pepper, salt, and garlic powder
  2. In each of the mini loaf pans, lay three strips of bacon lengthwise
  3. Shape a small loaf and place in pan then fold bacon on top
  4. Bake at 375 degrees for 1 hour to 1 hour 15 minutes
