Cajun Spice Rub

Cajun spice mix rub. 



Place 2 tablespoons each of freshly ground black pepper, sweet paprika and white pepper into a bowl, add 1 tablespoon each onion powder and garlic powder.

2 teaspoons dried oregano leaves and 1 teaspoon each dried thyme leaves and cayenne pepper.

Place in a shallow dish, add the meat and toss well to coat.

Marinate in the fridge for at least 3 hours before cooking on the barbeque.

Makes 1/3 cup

(You can also mix this into butter and make seasoned butter to keep in the fridge for a week. Tuck it under the skin of a whole chicken in the oven and broast it.)
