Leftover Mashed Potato Pancakes

Much prettier pancakes than I make but you get the idea!

2 cups of cold mashed potatoes

2 eggs

1 tablespoon all-purpose flour

1 teaspoon minced garlic

1 tablespoon dill


Combine all ingredients in a bowl

Heat oil in a skillet

Shape potato mixture into patties

Cover and cook until crispy on both sides. Takes about ten minutes on medium heat.
