Pot Luck Wednesday ~ Cheesy Saugsage and Hashbrown Casserole

With Christmas fast approaching I thought we would go with a breakfast recipe.  On Christmas day before we head out to visit with our family I cook breakfast while the kids play with their toys. I found this recipe on All Recipes years ago and substituted turkey sausage for the ham. I must say it worked out well. Even with the extra step it is a very simple recipe.  Have a great week! later. Ingredients ~

  • 1 (32 ounce) package frozen hash brown potatoes

  • 1 package of Jenny O Turkey sausage
  • 2 (10.75 ounce) cans condensed cream of potato soup
  • 1 (16 ounce) container sour cream
  • 2 cups shredded sharp Cheddar cheese
  • 1 1/2 cups grated Parmesan cheese


  1. Brown and scramble the turkey sausage. There will be very little oil, use a colander to drain off what there is and set meat aside.
  2. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  3. In a large bowl, mix hash browns, turkey, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
  4. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.
