Praline Mashed Sweet Potatoes

Alright at first glance these potatoes aren’t much to look at, but unlike the standard russet potato, sweet potatoes earn their name.

5 Cups mashed sweet potatoes or yamns

1/2 cup white shugar

1 1/2 tablespoons vanilla

4 eggs

1 cup heavy cream (I use 1/2 and 1/2 but if you want it really sweet use whipping cream)

1/2 cup butter-softened to room temp

1 cup packed brown sugar

1/2 cup flour

1 1/4 cups chopped pecans

1/4 to 1/2 teaspoon ground cinnamon

Preheat over to 350 degrees. Lightly grease a 9 x 13 casserole dish.

In a mixing bowl mix together mashed sweet potatoes, sugar, vanilla, eggs and cream; mix well. Spread into a prepared casserole dish.

In a separate bowl mix butter, brown sugar, flour, pecans and cinnamon. Mix until crumbly; sprinkle over the mashed sweet potato mixture.

Bake at 350 for 30 minutes.  The dish will be slightly firm.
