Stewed Okra with Sausage

I’m a terrible photographer…sorry!

This is a favorite of mine. It reminds me of my grandma.

Ingredients:

  • 1 pound andouille sausage (sliced)
  • 1 small onion (chopped)
  • 1 pound of fresh or frozen okra (chopped, if using frozen then drain all water)
  • 2 8oz cans of stewed tomatoes (I used the ones with chiles)
  • Salt and Pepper to taste
  • Cooked rice

Directions

  • In a heavy skillet, combine sausage and onions.
  • Cook until onions are tender.
  • Add the okra and cooked until no longer hard.
  • Add the stewed tomatoes and cover with lid.
  • Add salt and pepper to taste.
  • Turn heat down low at this point and simmer until okra is soft.
  • Serve over rice with hot cornbread.

  2. It can be spiced up too with extra chiles.
