Fajita Bites

Our guest chef is a Pampered Chef Rep who’d love to help you with all your cooking needs…but he does warn that these are highly addictive.

Chicken Fajita Bites



4 medium bell peppers (varied colors)

4 oz. mozzarella

2 TBSP.Chili Lime Rub *

3 green onions

2 boneless, skinless chicken breasts

1 (8 oz.) container fat-free sour cream


1 bunch fresh cilantro

1/3 cup fat-free (or light) mayonnaise



1. Preheat oven to 400ºF.  Cut 1” sections of sweet colored peppers and cut each  in half.  Arrange these wedges on a large pizza stone.

2. Finely chop green onions and cilantro.  I use my food chopper. Mix half the oni

on mixture, half of the cheese, chicken, mayonnaise and chili lime rub in bowl.

3. Blot excess moisture from peppers with paper towels, if necessary. Using a heaping tablespoon scoop, plop the chicken mixture in the middle of the pepper wedges. Sprinkle peppers with remaining cheese. Bake 5-7 minutes or until cheese is melted.

4. Put sour cream into a sealable 1 quart plastic baggie.  Add rest of cilantro/onion mixture. Squeeze bag to mix.

5. Remove stone from oven. Cut off a small piece of the corner of the sour cream bag and squeeze sour cream mixture over fajita bites.

6. If you don’t have our incredible Chili Lime rub, you can use 1 tbsp (15 mL) chili powder, ½ tbsp (7 mL) lime zest and ½ tsp (2 mL) salt.
