Shrimp Fried Rice
This is an easy recipe as in I can remember all the ingredients without having to pull out my cookbook all the time. And my family loves it.
3 cups cooked rice
8 to 10 strips of bacon cooked crisp
3 eggs scrambled and chopped
1 pound shrimp (other meat can be substituted such as chicken or pork)
2 teaspoons fresh ginger minced
2 green onions chopped in one inch diagonal pieces
1 tablespoon oil
2 tablespoons soy sauce or to taste
In a large skillet or wok heat oil add ginger and saute about ten seconds then add rice. Toss to coat. Add green onions. Mix well. Add bacon, eggs and shrimp. Now the soy sauce.
That’s it. Serve and enjoy.
